Spring Cooking Just Got Easier♨️

Hello Reader,

Spring and summer are my favorite times of year to cook. The ingredients are fresh, and the meals are lighter and quicker to make.

And… asparagus (my favorite vegetable) is back. Today I’m sharing a few favorite asparagus recipes, along with some other spring treats too:

Here are a few quick asparagus tips for you:

  • No need to cut the woody ends off. Just snap them before cooking. They’ll naturally break where the tough part starts.
  • To keep asparagus fresh longer, store it upright in a glass with a little water in the fridge (like a bouquet).
  • Leftover asparagus is great tossed into pasta, salads, or blended into asparagus pesto sauce (recipe above).

If you are not an asparagus fan, you can easily swap in broccoli, green beans, or another favorite vegetable in most of the asparagus recipes.

If you’re looking for more quick dinner ideas, my weeknight dinner system spreadsheet makes it easy to pull together simple dinners without starting from scratch. It’s more than a planner; it’s a tool to help you figure out what’s for dinner faster.

Enjoy the fresh flavors while they’re here!

Hello Reader, I have two simple skillet recipes to share with you today. First up is my new Pork Fried Rice recipe. This one is a favorite for so many reasons. The recipe lists vegetables that I normally use to make fried rice, but you can easily make fried rice your own.
