One Dinner, 3 Different Ways

If you’re looking for a quick dinner idea, this skillet caprese chicken is a good option. It comes together in one pan with just a handful of ingredients.

What I love about this recipe is how easy it is to swap a few ingredients and get something completely different.

Here are a couple of my favorite ways to change it up:

Mexican-style:
Swap the balsamic and tomatoes for diced tomatoes or salsa. Add cilantro and jalapeño, and finish with crumbled cotija or pepper jack cheese.

Mediterranean-style:
Skip the balsamic and drizzle with lemon, garlic and olive oil. Add oregano, olives, and feta.

Three dinners, with the same basic ingredients, and 3 different flavors.
