Dinner Tonight, Breakfast Tomorrow


Hello Reader,

When things get busy, or I don't feel like cooking, breakfast for dinner is my go-to. It's fast, it's satisfying, and eggs are a good source of protein and they are versatile. Load them up with vegetables, potatoes, cheese, or whatever you have on hand, and dinner is done in about 30 minutes.

The best part is that you can make a double batch for dinner, and tomorrow’s breakfast is already done - one dish, two meals, less to think about in the morning.

Here are some breakfast ideas that are hearty enough for dinner:

  • ​Vegetable Breakfast Casserole - This one is easy to put together with whatever vegetables you have in the fridge. I make a big pan of this and eat the leftovers the next morning.
  • ​Breakfast Tacos - Scrambled eggs, spicy sausage, potatoes and a warm tortilla along with your choice of toppings. Make extra filling tonight, then wrap up the leftovers for tomorrow’s tacos.
  • ​Crustless Veggie Breakfast Pie- All the flavor of a quiche without the extra step of making a crust.
  • ​Easy Breakfast Quesadillas - Eggs, bacon, and cheese tucked into a tortilla. Make a few extra and crisp them back up in a pan the next morning.

These might make tomorrow's breakfast easier:

​Deep baking dish with a lid for the casserole. Once dinner is over, snap on the lid and put it in the fridge. No transferring leftovers to another container.

​Pie plate with a cover for the breakfast pie, so storing and reheating it is just as easy as making it.

​Taco holder to keep breakfast tacos upright and the filling where it belongs.

​Bento box these are great if tomorrow’s breakfast needs to come with you.
